Baking with Poppy / Lemon-blueberry muffins

Poppy's favourite thing to do is help. On thursdays, on what she calls "mommy-days", she loves to help me make the beds, do laundry, unload the dishwasher, etc. And she is surprisingly good at helping. It takes little instruction for her to master a skill, and if she can't quite do it she tries and tries again. She has perfected folding - at least, folding anything square. She can fold a perfect tea towel, small blanket, or pillow case. She watches me, asks a question or two, and focuses on her task.

Since she's quite determined, and rather perfectionist-inclined, she is a great baker. She measures and scoops and conservatively shakes out cinnamon or salt - knowing she can always add more. This morning we were up at the crack of dawn for Soren's hockey game, and by 9:30 we were back home, and craving something sweet. I decided on these lemon-blueberry muffins from the iconic best of bridge ladies. I'm pretty sure my mom had all of their cook-books as I was growing up through the 80's and 90's, and their recipes tend to bring back good memories.

These muffins did not disappoint on their "super" powers! They are moist and flavourful with lots of juicy (frozen) blueberries and just the right amount of lemon. I changed the glaze a little and just mixed up a tablespoon or so of lemon juice with about half a cup of powdered sugar. Yum.
