I bought a can of pumpkin puree last week, and I've been impatiently waiting to use it. Last night I finally had a chance to do some baking, so I browsed pinterest and found a recipe I wanted to try. While it sounded absolutely delicious, I didn't have any coconut oil on hand... gasp... so I had to use plain old vegetable oil. The verdict? Delicious! I ate two straight out of the oven, and probably would have gone for a third if I'd allowed myself. I popped a couple in the kids lunches, and they reported back with empty containers - so that clearly says it all.
For some reason it always seems a little weird to bake with pumpkin at other times of the year - but it shouldn't be! It adds the perfect consistency to muffins, and lets them rise up to be nice and fluffy, without being cake-like. I did debate about adding chocolate chips, but ultimately decided against it due to the messiness factor with kids. They always manage to get chocolate ALL over their little faces, and getting faces wiped has got to be one of kids greatest hates. It's just not worth it, and you know what? These muffins don't need the chocolate. They stand up just great on their own, and I will be certain to make them again. Try them!
