The easiest dinner rolls


On days when it is chilly outside, I often make soup or chili for dinner. And what better to accompany chili than flakey, buttery rolls straight from the oven? While I love to bake, I get somewhat intimidated by recipes involving yeast. I've only made a couple loaves of bread, and while they turned out alright, for some reason I haven't made them again. Enter this no-yeast, ready in 10 minute recipe in which I always have the ingredients on hand!

Dinner Rolls:

2 cups of flour
2 tsps of baking powder
pinch of salt
1/4 cup butter, cut in small pieces and chilled
1 cup of buttermilk (I always use a cup of milk with a tablespoon of vinegar)
1 egg - lightly beaten

Mix the three dry ingredients together in a medium bowl. Add the butter and mix with your fingers (or use a food processor if you'd rather). Add the buttermilk and stir with a wooden spoon until a sticky ball forms. Dump onto floured counter and knead a couple times. Separate dough into small balls - I always make 8 - and place on a parchment lined baking sheet. Brush lightly with beaten egg. Bake at 325ºF for about 14 minutes - until lightly browned. Eat while warm! These don't keep very well, but they are so good they won't last long. If I ever have leftovers I toast and spread jam on for breakfast.

Poppy is not eating bread yet, but she loved the chili. Those red marks on her face are officially eczema - we visited the doctor today and got a diagnosis and a prescription. Seems to run in the family as both Tyler and Soren suffer from it as well. Poor little thing, I think I triggered a flare up when I accidentally bought a different laundry detergent. I've switched back, and hopefully the cream will start working quickly.
