Babies love beets


Who knew that babies would like beets so much? When they are oven roasted and tossed in olive oil, balsamic vinegar and topped with goats cheese, they are pretty hard to resist. At least Poppy thought so!

The weather was absolutely gorgeous today, so I loaded up the stroller with all of our picnic necessities and headed to the park for dinner. Tyler and I are trying to stick to a budget, and we're actually enjoying saving money. (We don't have much of a choice… so better to make the best of it!) I snuck a bottle of wine in the picnic bag, and paired with homemade egg salad sandwiches it was a pretty lovely date. We sat on a little hill with our beet-obessed babe, sipping wine from plastic cups and watching Soren befriend some older girls:) After we were all played out we walked home and plunked two tired babes in the bath together, even though it was past their bedtimes. They splashed around and giggled - and it was one of those happy family moments when everything seems perfect and you feel like you are living a memory. Years down the road I hope we can look back on days like today… picnic-ing in the park and playing and laughing. It doesn't get much better!
