Parsnips

A whole post dedicated to Parsnips! I never knew a vegetable could be so exciting. We had parsnips for dinner (along with salmon, beets, carrots, and potatoes), and then I decided to try a Pinterest recipe I found for Parsnip Spice Cake. It was a little odd baking with Parsnips, but I figured anything with cream cheese icing was bound to be a hit.

And the verdict? It was good, really good. A slightly 'different' flavour which I'm not sure is from the Parsnips, but possibly from the combination of spices (allspice, nutmeg, cinnamon, cloves, pepper, and lots of ginger). I would make it again, possibly in the form of muffins as one reviewer wrote.

One other exciting thing to share - I was featured on the Disney Baby Blog! A couple of days ago I received an email from Lacy who is a contributor for Disney Baby. She was working on an article describing the 52 Project, where I am taking a portrait of Soren every week for 2013. Each week hundreds of bloggers link up their photos, and she selected a handful to feature. I'm honoured!
