The Littlest Linden's Favourite Chili

I wasn't sure if a baby should eat chili... but then I made it last week and figured he could have a little. I started by picking out just the beans for him, but soon realized that he wanted to eat EVERYTHING! I'm still not sure if he should eat chili, but he did, and as evident it is now his favourite meal! Here's the recipe I used: (and by the way this definitely an adult food, in case you are thinking twice about trying a baby-food recipe!)

Ingredients:
2 tbls of olive oil
2 onions, chopped finely
2 bell peppers, any colour, chopped finely
1/4 cup chili powder
1 tbsp of cumin
1 tsp of cayenne pepper
6 garlic cloves, minced
2 pounds lean ground beef. (I used about 1.5 pounds of beef, and then half a pound of ground pork)
1 can (15.5 oz) of dark red kidney beans, rinsed
1 can (15.5 oz) of black beans, rinsed
1 can (28 oz) of diced tomatoes
1 small can of tomato puree
1 can (15.5 oz) of tomato sauce

Directions:
Heat the oil in a large pot under shimmering. Add the onions, bell peppers, chill powder, cumin, cayenne and a pinch of salt. Cook until the vegetables have softened but not browned, about 7 min. Stir in the garlic. Add the beef and cook until no longer pink, about 10 min. Stir in the beans and tomatoes with their juices, and bring to a simmer. Cover with a lid and cook for 45 min. Remove the lid, and continue simmering for about 30 minutes or until the desired consistency is reached. (the longer you simmer, the thicker the chili will get.)

I find this makes about 8 large portions, and keeps well in the fridge for up to 4 days. It also freezes really well.
